Nut-Free Granola

Breakfast is the most important meal of the day and you should definitely start out with something delicious. Now I personally love granola and mixing it into a bowl of yogurt or even cereal with some milk is a tasty morning treat.


My oldest is severely allergic to peanuts so we had to stop buying my usual store-bought granola. To play it safe we decided to start making our own instead and it is so easy. Whether you have a nut allergy or not, this granola recipe is super delicious. It's the perfect way to start your day or even to just snack on the go.


This recipe is also super simple to modify. Add extra items like seeds or other dried fruits that you like.

Ingredients:

2 Cups of rolled oats

1/2 Cup agave or honey

2 Tbsp. olive oil

1 Tsp cinnamon

1/3 Tsp Salt

1 Tsp vanilla extract

1 Cup of dried cranberries or other dried fruits

1/2 Cup mini chocolate chips


Directions:


1) Preheat the oven to 350*F. Start by combining the oats, cinnamon and salt together in a large mixing bowl.


2) Add the olive oil, agave (or honey) and vanilla extract. Mix thoroughly until the oats are fully covered.


3) Coat a large baking sheet with non-stick spray or parchment paper. Spread the coated oats onto the pan making sure it is as even as possible to ensure proper baking.


4) Bake the oats for about 15-20 min. Take them out of the oven and let them fully cool. If the oats seem a little soft don't worry, they will turn crispy even after they are taken out of the oven.

5) Once the oats are fully cooled add your dried cranberries and mini chocolate chips. Stir well and enjoy.



These oats can stay fresh for about two weeks if they are stored in an airtight container.

For the holiday's we actually put this granola into some cute jars I picked up at the dollar store and gave them as gifts. It's super basic but a great idea to give a personal gift to someone whether it's for a birthday, the holiday's or a simple thank-you gift.


Pair a jar of this granola with some other homemade goodies and you have a thoughtful and yummy gift. Decorate it by simply placing some fabric under the rim and add some ribbon or bows.
