Easy Banana Pancakes

Bananas are so delicious and are a great addition to many breakfast dishes. Sometimes pancakes can be a little bland so why not mix it up by adding fruit to the batter!


Now I have to admit that I am usually the type of person who uses the instant powder boxes for my pancakes because it was just easier for me. However once the pandemic hit I had a very hard time finding pancake batter.


Not only is it still difficult to find, but the few brands the store would have in stock generally contained nuts or are made in a facility that does. My daughter is highly allergic to peanuts so those are not even an option. So I had to do a little research and discovered that homemade pancakes are REALLY easy to make!

I have been making these for the past few months and my family absolutely loves them. Even my husband who is not a breakfast food person likes these and usually has several. This recipe can also work well with other fruit too so don't limit yourself. Try replacing the bananas with apples, blueberries or even chocolate chips if you don't mind a few extra calories.


Ingredients:

2 Ripe bananas

1 Cup of Flour

1 Tbsp Cinnamon (optional)

1 tsp Baking Soda

2 Eggs

1/2 Cup of Milk


*One batch makes about 8 pancakes





Directions:


1. Start by mashing up the ripe bananas into a large mixing bowl using a potato masher or fork.


2. Add the two eggs and milk. Mix it all together until it is well blended.


3. Add the flour, baking soda and cinnamon (optional). Mix until it is a creamy texture with few lumps. If you have some small banana lumps that's fine too. If the mixture is too thin or runny add a little bit of flour to make it the desired consistency.


4. Heat up a non-stick skillet on medium heat. Once the pan is hot, use a 1/3 measuring cup to scoop the mixture and pour individual pancakes. You should start to see bubbles appear after about a minute or two. At that point use a spatula and flip the pancakes over to finish cooking on the other side for one to two minutes or until it is golden brown.


5. Continue these steps using up the rest of the batter. Then enjoy your amazing and healthy pancakes! Top them with syrup and banana slices for an awesome breakfast the family will love.
