Soft Honey Sugar Cookies

I've never been a huge fan of honey but I'm starting to really like it. My daughter recently became obsessed with the Honeycombs cereal and loves bees so we did a little homework and decided to try some honey cookies!

Now the holiday's are right around the corner too so these soft and sweet cookies will make a great addition to our normal recipes we make. I'm not usually one for sugar cookies though and we tend to stick to slightly more healthy options. However these taste great and we did end up substituting oil for applesauce to cut down on some of the calories and fat content.


If you are going to make these for a holiday party or get-together you can always make them a little more festive too by adding colored sugar sprinkles. Just roll the dough in them instead of normal sugar and you can have a super cute cookie spread.


Ingredients:

2/3 Cup Unsweetened Applesauce

2 Cups of Sugar (1 Cup for rolling the dough in)

1/4 Cup Honey

1 Egg

1 Tsp Vanilla Extract

2 Cups Flour

2 Tsp Baking Soda

1/2 Tsp Salt


Directions:


1) In a small or medium sized mixing bowl combine the apple sauceand honey. Then slowly add the sugar until it is well blended.


2) Add the egg and vanilla to the honey mixture and stir well.


3) In a separate large bowl mix the flour, baking soda and salt together. Pour the smaller bowl with the honey mixture into the larger flour bowl combination.

4) Mix everything together and then put the gooey batter into the fridge. Allow it to cool for about 30 mintutes before baking so the dough can firm up. Otherwise the dough will be too runny and will spread too much on the baking sheets.


5) Preheat the oven to 350* degrees. After the dough has cooled, scoop small balls of dough (using an ice-cream scooper and spoon worked well for us) and roll it in a small bowl of 1 cup sugar. Coat each cookie in a thin layer of sugar and then put it on a cookie sheet.

6) Scoop the dough onto greased cookie sheets (or parchment paper lines sheets would work well too). Bake for about 7-8 minutes or until they are a light brown color. Enjoy!

These cookies stay super soft and delicious for several days in an airtight container. If you plan on giving these as a gift or taking them to a party I recommend cutting small pieces of parchment paper and placing them between each cookie. They are very soft and a little sticky due to the honey so the paper will prevent them from clinging too much.
