I recently started my garden this year and it has been amazing. I have always been that person that could not keep plants alive so I was a little unsure about starting a full blown garden. However it has been a great learning experience for not only myself but my oldest daughter who is my little gardener assistant.
Now that summer is coming to an end (sad but true) I have tons of tomatoes that are ripening all at the same time. I plan on making some homemade tomato sauce with my larger tomatoes but I have a bunch of little grape tomatoes that need to be used up as well. They worked so well for this recipe and taste amazing!
This recipe is so easy and it doesn't even require any cooking at all! All you have to do is just mix everything together, let it chill and voila! It has such a fresh and yummy taste and it's a great way to use up all of those tomatoes from your garden that are ripening.

If you have a gathering or small party to go to this recipe is great to make. Serve it with your favorite tortilla chips and you have an instant crowd pleaser. Check out this great serving bowl tower. It collapses for easy storage and would be great for serving this homemade salsa and some chips.
I generally like my salsa to be more smooth and I don't care for large chunks. So for this recipe I made sure to chop everything into small pieces and blended it all very well. However if you are a fan of chunky salsa just don't cut up the pieces as small or you can always add larger pieces at the end.
Ingredients:
2 cups of tomatoes
1/2 small onion
1/2 bell pepper
1 Tsp crushed red pepper
1 Tsp ground cumin
1 Tsp cilantro
3 Tbsp lemon juice
1 Tsp salt
1/2 Cup of chopped celery (optional)
Makes about 3 Cups of salsa (~1.5 standard 16oz mason jars)
Directions:
1) Chop up the tomatoes (if using larger ones), bell pepper, onion and celery (optional) into small chunks.
2) Combine chopped tomatoes, bell peppers, onion and celery (optional) into a food processor or blender. Blend everything together until most of the large chunks are gone.
3) Add the seasonings (cumin, cilantro, red crushed pepper and salt). Pour in the lemon juice and blend to your desired consistency.
4) Let the finished salsa sit in the fridge for about two to three hours so the flavors can fully blend together. Then enjoy and serve it up for your next get-together!
This salsa will last about three or four days in the fridge, however mine was all eaten way before that. If you like really spicy salsa add another Tsp of the crushed red pepper or cumin.
