Mini Banana Muffins

These mini muffins are great for breakfast, lunches or even just a snack. Both of my little kiddos (ages 1 & 4) love these and they never stay in the house for long. I like having a few myself too! We are big fans of anything with bananas and these are a great way to use up old ripe ones instead of throwing them out.


You can also add other fruit or even sneak in a few veggies into this recipe for added nutrients. Try it with some cooked and shredded carrots or mix in a little spinach!

Ingredients:

3 medium bananas

1/4 cup of butter

1/3 cup of applesauce

1 tsp vanilla extract

1/4 cup milk

2 eggs

2 tsp cinnamon

1 tsp baking soda

1 3/4 cup of flour


-Makes about 40 mini muffins






Directions:


1) Preheat the oven to 350* F and spray a mini muffin pan with non-stick cooking spray.


2) In a large mixing bowl using a potato masher or fork, mash up the bananas until there are very few chunks.

3) Melt the butter in the microwave and mix that in the bowl with the bananas. Add all the other wet ingredients: applesauce, milk and vanilla extract. Then add the eggs and mix everything together.

4) Now it's time to add the dry ingredients. Put the cinnamon, baking soda and flour into the bowl and stir again until the mixture is creamy.


5) Spoon the mixture into the mini muffin pan filling each container almost to the top. These muffins do not really expand that much so no worries with it overflowing. Bake for about 12 minutes and then using a toothpick make sure it comes out clean. Enjoy!






These muffins can last in an airtight container in the fridge for about 4-5 days. I also like to make larger batches and freeze some of these for easy and quick future snacks or meals for the kids.
