I don't know about you but I love pizza. It goes well with so many things and can be such a satifsying and quick meal. However it's no surprise that it's generally loaded with fat and calories. As much as I love pizza I do not care for how greasy and heavy some of them tend to be. So if you're like me and your a fan of pizza but don't want all of the extra calories try this variation.
It's super yummy and a much healthier alternative to greasy store bought pizzas. You still get some of the pizza taste but with no guilt! This is also a great food for kids to snack on. I know my daughter gets excited about her mini-pizzas and doesn't seem to mind they're made of vegetables.
Ingredients:
1 Whole zucchini
Olive oil
Tomato sauce
Shredded cheese
Pepperoni bits (optional)
*Makes about 16 bites
Directions:
1) Wash the zucchinis and then cut off the ends. Cut the zucchini into slices that are about 1/4 inch thick. If you cut them too thin they will turn out mushy and will be hard to flip.
2) Coat a frying pan with olive oil and let it warm up on medium heat. Once the pan is warm place the zucchini in a single layer inside the pan.
3) Flip the zucchini pieces after about 5 minutes. Cook each side until they are a golden brown color.
4) Turn off the heat and place a small spoonful of pasta sauce on each zucchini piece. Finish by topping them off with shredded cheese and pepperoni bits if desired.
5) Enjoy! These taste best when they are hot and fresh off the stove but can be refrigerated and saved for later. They only last about a day in the fridge but they usually don't even make it to that point in my house!
