Pasta & Kale Dish

Kale is a super healthy leafy green food that is loaded with vitamins. That's why I like to try and incorporate it in some of my meals and find ways to make it actually taste good.


My mom actually got me hooked on this dish a few years back. It's pretty easy to make and tastes so yummy! Personally I like to just eat this all by itself but you can definitely pair this with other foods for a more rounded meal. It does taste best when it's warm so just heat it up for a little bit before enjoying any leftovers.


Now like most of my recipes this one only has a few wholesome ingredients and it's pretty easy to put together. What really gives this dish it's savory flavor is the combination of garlic and onion so make sure you don't skimp on those items.

Ingredients:

  • 3 Cups of Pasta (I used tri-colored rotini but any kind will work)

  • 1 Small Tomato diced (or 2-3 Cherry Tomatoes diced)

  • 1 Bunch of Kale

  • 2 Tbsp Olive Oil

  • 1 Tbsp Minced Garlic

  • 2/3 Cup Diced Onion

  • Salt









Directions:


1) Start by placing the diced onion, minced garlic and olive oil in a pot. Let the mixture cook for about 10 min or until everything is a nice golden brown color.


2) In a separate pot boil 3 cups of pasta which should take approximately 10 min to cook.


3) Pull the kale leaves off of the steams and thoroughly wash them. After it has been cleaned add the kale to the pot with the onion, garlic and oil mixture. Let the kale cook down for about 13 min covered or until it's tender.


4) Add the diced tomatoes at this point and toss in the cooked pasta. I like to sprinkle a little bit more olive oil at the end and add some salt to taste. Mix it all together and enjoy!


This dish is best served heated up and can last in an airtight container in the fridge for about 4-5 days.
