Crispy Kale Chips

Kale is such a healthy addition to your diet because it is full of antioxidants and vitamins. Depending on how you cook it though it can tend to be a little bitter, however these chips are definitely not.


These chips are crispy and full of rich flavor and only have four ingredients. You can add whatever additional seasonings you want but I like to keep mine pretty simple. They taste amazing right off of the hot pan but can also last a few days in an airtight container. I try to go for these if I want a crunchy snack instead of a bag of chips.


My daughter likes to help mix everything up in a big bowl but I have to admit she doesn't like eating these. She calls them my 'stinky chips' but I'm sure when she gets a little bit older she will try them. Also as strange as it is, these chips were my biggest craving during my second pregnancy and I just had to make them weekly.


Ingredients:

2 Bunches of Kale

1 Tbsp Olive Oil

1/3 Cup Bread Crumbs

1 Tsp Garlic Salt



Directions:


1.) Start by separating the kale from the stems, breaking it into the size chip you want and then washing it all up.


2.) Using some towels dry the kale as best as you can. If the kale is too wet the oil and seasonings will not stick to it when mixing. At this time preheat the oven to 300 degrees. It will only take a few minutes to heat up so there is no need to turn your oven on too early.


3.) In a large mixing bowl massage the oil into the kale with your hands until it is thoroughly coated. Then add the bread crumbs and garlic salt using your hands again to mix it all together. You could use a spoon or spatula to mix it but it's a little harder to coat the kale that way. The best way is to just get your hands a little dirty. Sometimes I have to do two separate batches because it will not all fit in one bowl or pan.


4.) Spray up to four baking sheets with cooking spray. Spread the kale onto the sheets avoiding any big lumps. I like to sprinkle some extra bread crumbs and garlic salt on them right before you bake them for added taste. Then put them in the oven for about 10 minutes.


5.) Let them cool off for about 5 minutes and then enjoy! They taste amazing when they are hot directly off the sheet but you can also store them in an airtight container or zip-lock bag for about 4 days. When storing them make sure to add a sheet of paper towel to the bottom of the container to absorb any excess moisture.
