Turkey and Sweet Potato Skillet


There are so many nights where I come home after work and don't feel like cooking. I've worked all day, the house is a mess and the kids want to play so it's hard to sit there and cook a giant healthy meal for everyone.


That's why this meal is so great and I make it all the time at my house. Using ground turkey instead of beef cuts down on fat and calories and still tastes great. It's fast, easy, fills you up and everyone actually eats it!


To make this dish even faster I like to prep the ingredients over the weekend when I do some meal-prep work. If you have too many vegetables or they're starting to go bad you can cut them up and freeze them. Then when it's time to make dinner pull out a bag and toss it into the pot. It saves you time during the week and creates less waste since you're not throwing as much out.

What is really awesome about this recipe is that it can all be done in one big pot or pan so there is less mess to clean up! It has a great mix of veggies and protein so this makes a great meal. I like to do some meal-prep with this on Sunday's and pack up my work lunches for the week.

Ingredients:

1 lb ground turkey meat

1 large sweet potato

1/2 cup shredded cheese

1/2 cup of diced onion

1/2 cup of diced bell peppers

2 Tbsp minced garlic

3 Tbsp Olive Oil

1 Tbsp Paprika

Salt and black pepper

*Makes about 4 servings







Directions:

1) In a large pot put the olive oil to coat the bottom, then add the ground turkey and minced garlic on medium heat. Cook the meat until it is all brown.


2) Chop up the sweet potato into small cubes. TIP: To make the sweet potatoes softer put them in the microwave for about 2 minutes. It softens them just enough to make them much more easy to cut.

3) Once the meat is thoroughly cooked add the bell peppers and onion. Let this sit for about 5 minutes stirring occasionally.


4) Add the diced sweet potatoes, salt, pepper and paprika. Cover the pot and cook for about 10-15 minutes until everything is soft. If the mix is starting to get a little dry you can always add a little bit more olive oil at this step or even a little water.

5) When the sweet potatoes are thoroughly cooked, add the shredded cheese and some salt and black pepper to taste. Stir everything together, top with parsley and enjoy!


This dish is great for doing meal-prep! Make extra and seperate it into containers so they are easy to grab throughout the week for a healthy meal. Or freeze leftovers to use for future dinners.
